Our Mom Preparation involves carefully marinating large pieces of chicken with yogurt, ginger-garlic paste, and a proprietary blend of aromatic spices, often including mace, nutmeg, and green cardamom. This marinated chicken forms the base, layered with partially cooked, fragrant long-grain basmati rice. Caramelized onions, fresh herbs like mint and coriander, and saffron-infused milk are interspersed. The entire pot is then sealed and slow-cooked over a low flame (dum cooking), allowing the meat to tenderize perfectly and the rice to absorb every complex, drool-inducing aroma.

Hyderabadi Mutton Dum Biryani
Preferably for Weddings, a culinary masterpiece, known for its rich aroma, tender meat, and perfectly cooked basmati rice. This regal dish is a staple at grand celebrations, often prepared in colossal vessels to feed many.
The preparation begins with marinating mutton in a luxurious blend of yogurt, ginger-garlic paste, fresh herbs (mint, coriander), and a secret mix of whole and ground spices like cardamom, cinnamon, cloves, and mace. This marinated meat is then layered with partially cooked, fragrant Basmati rice. Crucial additions include golden-fried onions (birista), saffron-infused milk, and ghee. The magic unfolds during “dum” cooking: the pot is sealed tightly to trap steam, allowing the flavors to meld and the mutton to slow-cook to succulent perfection over hours, often over a wood fire for an authentic smoky depth.

Fragrant basmati or seeraga samba rice is then added, often alongside a touch of coconut milk for richness and a unique creamy texture.
